How Is Yeast Made?
I was making bread recently and was wondering how yeast is made. This article talks about what I learned.
When I was in college, I would make my own bread. For a while, I cultured my own sour dough starter. Recently, while making bread, I was wondering how the yeast manufacturers make their yeast. I’ve done some research and found that there is a difference between sour dough yeast and cultured yeast. The sour dough yeast has “wild yeast” where cultured yeast is seeded with a pure breed of yeast culture.
In a nutshell, yeast lives in the air and is attracted to carbohydrate materials such as fruit, potatoes, malt, grains. Surprisingly, there are recipes around for producing your own recipe. Here is a list of some interesting recipes and techniques:
- My German Recipes seemed the most practicle.
- Red Star has an interesting article on the science of producing yeast commercially.
- King Arthur Baking has an interesting article that talks about how yeast works.
- Survivopedia also has an interesting take with recipes.
